In Mendon, Vermont - halfway between Killington and Rutland is this well-known sugarhouse, Sugar & Spice.  A sugarhouse is a building in which maple sap is boiled down to yield maple syrup and maple sugar.  In the spring when sap begins to drip from the Maple trees, they simply place buckets under the trees to collect it.  Then they bring it inside to process it.  Many sugarhouses (like this one) have shops and restaurants where you can buy the products and/or enjoy them as fresh as they can be right on site.
