Barcelona 2013

At Caelis, Chef Eric Basset prepared a special dessert for us himself.  Called the Chocolate Raspberry Explosion, he filled chocolate globes with mousse, berries and meringue, using liquid nitrogen to cool the structure.  Just as it began to look pretty, he suddenly used his utensils to cause the globes to explode on the table - revealing all the treats for us to eat!  Very creative and memorable!
