This balut is 17 or 18 days old, so the duck embryo can easily be seen. The beak and legs are firm and a bit crunchy while the immature feathers are soft and gelatinous. The yellow yolk behind the embryo tastes similar to any hard-boiled egg you may have eaten. In the Philippines, most prefer to sprinkle a bit of salt and/or a chili and vinegar mix on top to complement the flavors. |
