The traditional Maori Hangi feast is prepared in this earthen oven.  The rocks are heated until white hot.  Then baskets of meat are put on the stones followed by baskets of vegetables.  The lot is covered by wet cloth and then dirt.  It is allowed to cook for 2-3 hours before being dug up and served.
