Bjarnarhöfn Shark Museum is owned by Farmer Hildibrandur and his son (pictured here).  They process the Greenland Shark (Somniosus microcephalus), a deep dwelling shark and one of the largest sharks in the world, into edible meat like the piece Pam is holding up.   If this man looks familiar to you, you may have seen him with Anthony Bourdain or Andrew Zimmern who both did episodes of their food shows at this remote location in Iceland.
