We absolutely loved the cassoulet served on Place St. Jean in Carcassonne. Cassoulet is a specialty here, a rich, slow-cooked white haricot bean stew containing pork, goose, duck and sometimes mutton. Maybe it was the setting, but it tasted so good here - very memorable! |
