Sydney, Australia 2007

Chef Tetsuya Wakuda has refurbished a heritage-listed site in Sydney to create his dream restaurant, Tetsuya's. The restaurant offers sophisticated and intimate private dining rooms and two large main dining rooms overlooking a Japanese garden.  Tetsuya's cuisine is unique, based on the Japanese philosophy of natural seasonal flavours, enhanced by classic French technique and the freshest possible ingredients.  You don't "order" here - everyone is treated to Tetsuya's renowned degustation set menu, a frequently changing array of ten courses.  Here we are enjoying his signature dish, 'Confit of Petuna Tasmanian Ocean Trout with Konbu, Daikon & Fennel'.  It is nothing less than a party for your taste buds!
